Gary Taubes nació el 30 de abril de 1956 en Rochester, Nueva York, Estados Unidos. Se formó en física aplicada en la Harvard University, ingeniería aeroespacial en la Stanford University y periodismo en la Columbia University. Su carrera profesional comenzó como reportero de ciencia, trabajando en publicaciones como la revista Discover magazine desde 1982, para luego enfocarse en los temas de nutrición, metabolismo, obesidad y enfermedades crónicas.

Se hizo ampliamente conocido por desafiar las creencias establecidas en torno a la dieta y la obesidad. En su libro Good Calories, Bad Calories (2007) argumentó que la fracción de los carbohidratos, especialmente azúcares y almidones refinados, es clave en el desarrollo de la obesidad y las enfermedades metabólicas, más que simplemente “comer demasiado y moverse poco”.
